Acids are found in nature and are an integral part of a food. For example citrus fruits contain citric acid.
Food Acids can act as preservatives when added to foods. The acid reduces the pH of the food which in turn can reduce the growth of spoilage bacteria and thus increase the shelf life of the final product. Acids are also added to foods to give the desirable taste profile. Acids when used correctly can also mask the slight lingering taste of intense sweeteners There are different types of food acids such as citric acid, malic acid and tartaric acid that are naturally occurring food acids.
